Not sure about the first question. I think they are what ever the manufaturer offers. The Chevy's run Chevy engines. The Toyotas run Toyota and so on. But not 100% sure.

YES they are carberated. No FI allowed.

They were using SB2 (Gen II) blocks, but most have now switched over to RO7 blocks and yes these are made by Chevy...they are limited to 358 cubic inches. The RO7 is specifically designed and made by Chevy for NASCAR...the SB2 was not...it's an off the shelf block...that's almost the same design as the original 265/283 block of the late fifties http://www.huliq.com/18638/team-chevy-rolls-out-new-chevrolet-r07-racing-engine Don't know about the others...don't care about the others (well Chrysler does make theirs also...but they're also special blocks strictly made for NASCAR)

OK that being said, that some of the fastest cars out there run on carbs. is it better to have FI or a carberated motor? i know carbs are fussy when cold i hear when hot too. in the morning my 327 is a little hard to start. i just taght my self a trick to start it when its really cold, i pump the gas three times let off the gas then turn the key then give gas again and it starts. but when its worm in the day it starts right up first turn almost like instant on.

Note if the 3 pump start system don't work, try the kick start method. That always works for me. Ha Ha. Point to remember when pumping a carberated engine, you r flooding your carberator with fuel. When pumping an FI, you are just wasting your time.
