I have an 86 with a 305 that I'm planning on rebuilding, the first step is going to be removing the a/c. I've been told that it is not safe to just do it because of the pressurized refrigerant in the lines, I've also been told by someone who claimed to have done it before that you can just open up a valve and let the refrigerant evaporate into the air. Can I empty the lines myself or should I have a professional do it?

You should a section of your A/C lines that are rubber and therefore flexible. This allows you to unbolt the compressor and move it off to the side out of your way. In other words, based on what you've said, there is no need to open the pressurized system.
