Will the heater only unit bolt right up to the air conditioner opening in the firewall? What years will work in the '79 elky? There is a wrecking yard near me that has several old chevelles. Would one of those work?

The heater is part of the HVAC system and If your intention is to remove the large AC evaporator/heater core assembly at the right side of the firewall you will have to use non OEM parts and probably make a prettty complicated retrofit. I doubt that it is practical.
