The headliner in my '84 is in really good condition, but it's a tan color and I want it to be black. Is there a fabric dye I can spray on or is the vinyl dye what I should use? I'm ordering the carpet in black, so I figured the carpet and headliner should match for now.
Tips/tricks/is removal fairly simple? All the trim inside is in pretty bad shape too...all oxidized and or deteriorated..

There is fabric paint that you can use. It'll work fairly well on the headliner.

Anything for interior is a special paint and not a dye.

it probably isn't a good idea to be removing your headliner. even if it is in good shape, it is going on 25 years old, and will probably be a real pain to take off, if it comes off in one piece. best to try to recolor it installed.

Scott, Rob is correct, best to do it installed, just mask it off. And PepBoys has the Fabric color.
